125 gr flour
40 gr plantbased protein powder
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
30 ml apple cider vinegar
250 gr unsweetened soy milk
Handful fresh blueberries
Zest of 1 lemon
TOPPINGS:
Soy yoghurt
Blueberries
Maple Syrup
METHOD:
In mixing bowl whisk the lemon juice & soy milk to make your vegan buttermilk. Set aside to let it curdle.
Meanwhile in another bowl mix together the dry ingredients.
Combine the wet with the dry ingredients until a batter forms.
Heat up a little bit of oil in a pan on medium heat and scoop about 1/4 cup of the batter into the pan. Fry each side for about 2 minutes.
Stack ‘m high and garnish with the toppings.
